Blackbean Soup
Ingredients
3/4 lb dry blackbeans, soaked
4 strips bacon, chopped
3/4 cup frozen kale
1/8 cup heavy cream
1 medium onion, chopped
1 jalapeño, diced
fresh or dried cilantro
lime juice
garlic powder
black pepper
Instructions
Cook the blackbeans until soft, around 10m in an Instant Pot
Brown the bacon, onion, jalapeño, cilantro, and kale together in a skillet
Combine blackbeans, heavy cream, and bacon mix. Immersion blend, stopping before smooth
Season with lime juice, garlic powder, black pepper, and salt
