Ingredients

Instructions

  1. Toast nuts 300F 6 minutes
  2. Mix brown sugar, white sugar, oil, eggs, applesauce, and vanilla until smooth
  3. Combine dry ingredients (flour, baking powder, baking soda, salt, spices)
  4. Combine wet ingredients into dry ingredients, avoiding lumps
  5. Add in carrots and half of toasted nuts
  6. Pour into 2 9-inch cake pans, bake 30 minutes
  7. Prepare icing by whipping all ingredients together
  8. Allow cake to cool, then stack, ice, and garnish with remaining nuts
