Charro Beans
Ingredients
2 cups dry Pinto Beans
1 bunch Cilantro
3 Roma Tomatoes
1/2 head Garlic
1 Jalapeño
1 Yellow Onion
1/4 lb Bacon
1 pkt Dry Ham Seasoning
1 pkt Dry Cilantro Seasoning
Powdered Chipotle Pepper
Tajín
Black Pepper
Juice of 1/2 Lime
Salt
Instructions
Soak beans overnight.
Rinse beans, add water to double height of beans, slowcook 6-9 hours, or until soft.
Chop bacon, onion, garlic, and jalapeño. Sear in a skillet.
Chop tomato.
Add bacon, onion, garlic, tomato, jalapeño, and seasonings to beans; slowcook 1 hour.
Add cilantro and lime. Serve.
